Show your friends and family or significant other how special they are by making these special truffles. They are sinfully delicious, decadent and pretty simple to make.
10 oz. bag Ghirardelli 60% Cacao dark chocolate chips
1/2 t. coconut oil, canola or a mild tasting oil
dried cherries, (Trader Joe's, Whole Foods or some markets have them), or dried raisins or cranberries
1-2 drops cherry extract, optional
colored sprinkles, optional
Clean small molds if using or a large cookie sheet covered with parchment paper or wax paper ready to go.
Melt 6 oz. chocolate in the microwave or over a double boiler as directed on package, along with the small amount of oil. When completely melted, add the remaining chocolate; mix until melted and chocolate is smooth and shiny.
Pour a small amount of chocolate in each mold or on parchment; place a dried cherry on top. Dollop on more chocolate to completely cover the cherry.
Place in refrigerator until completely hardened, about 30 to 60 minutes. Pop out of molds and off of paper. Allow to sit on the counter for 10 minutes to enjoy the chocolate goodness.
Store in the refrigerator for up to 5 days.
