Description
Chili doesn't have to be meatless or made with just beef. Try this version with pulled pork and you will be happy that you did.
Ingredients
- 16 oz. can chili beans, drained
- 2 T. olive oil
- 2 medium onions, chopped
- 3 cloves garlic, chopped
- 2 medium green peppers, chopped
- 2 t. chili powder
- 1 t. ground cumin
- 14.5 oz. can diced tomatoes, undrained
- 2 lb. pulled pork, regular or BBQ, homemade or store bought
- 3 c. chicken stock
- 1 t. hot sauce
- 16 oz. can kidney beans, drained
- 1 c. sour cream
- 3 T. fresh cilantro, chopped
- 1 c. shredded Cheddar cheese or your favorite
Steps
- Heat oil in a 4 quart saucepan over medium heat. Add onion, garlic, green pepper and dried seasonings; cook 5 minutes, stirring often. Stir in tomatoes and pulled pork; add chicken stock, hot sauce and beans; bring to a simmer. Cook 20-25 minutes.
- Serve topped with sour cream, cilantro and cheese. Serve with crackers and/or Fritos.
