Donald Trump's Mother’s Meatloaf

Description

Feel as good as Donald did as a boy when he ate his mother's meatloaf. It's warm and satisfying and so delicious. Serve with a veggie and a creamy mushroom gravy and mashed potatoes, if desired.

Ingredients

2 lb. lean ground beef
1 Spanish onion, finely diced
1 red bell pepper, finely diced
1 green bell pepper, finely diced
2 cloves garlic, minced
1 large beefsteak tomato, fined diced with seeds removed
2 extra large fresh eggs
2/3 c. seasoned breadcrumbs
¼ c. chopped parsley
2/3 c. tomato puree
1/2 T. salt and pepper

In a large pan, slowly cook peppers, onion, garlic and tomato until onions turn translucent; let cool.

Preheat oven to 350 degrees.

In a large mixing bowl, add ground beef, cooked cooled vegetables, eggs, breadcrumbs, parsley, salt and pepper; mix well.

Remove mixture from bowl. Place in a 14 x 9 x 2 inch ceramic baking dish; form into a loaf.

Top loaf with tomato puree. Bake 45-55 minutes or until brown and firm.

Let meatloaf rest for 10 minutes before slicing.
