Description
Whether you make this delicious soup on the stove top or in the slow cooker, it's easy to make and will warm your heart. Serve with a crusty bread to soak up all that wonderful goodness.
Ingredients
- 2 lb. Italian sausage
- 5 c. beef stock
- 1 small chopped onion
- 14.5 oz. can petite diced tomatoes, with juice
- 3 oz. tomato paste
- 3 t. minced garlic
- 1 1/2 t. black pepper
- 1 t. salt
- 2 T. Italian seasoning
- 16 oz. bag frozen Italian vegetable blend
Steps
- In a large saucepan, brown the Italian sausage over medium heat. Drain off and discard the fat. Add stock, onion, tomatoes, tomato paste, spices and frozen vegetables. Bring to a boil over medium heat.
- When boiling, cover; turn to low; simmer 20-25 minutes or until the veggies are tender.
- Serve immediately.
