Description

  • 1 1/2 lb. skinless salmon fillet
  • coarse salt, to taste
  • freshly ground black pepper, to taste
  • 1 T. unsalted butter
  • 2 t. all-purpose flour
  • 1 c. dry white wine (or lemon juice)
  • 1 T. freshly chopped chives (or fresh parsley)

Steps

  1. Preheat oven to 450 degrees.
  2. Place salmon on a rimmed baking sheet; season with salt, to taste.
  3. Roast about 15 minutes, until opaque throughout.
