There won't be any leftovers when you serve this salad. It will become your favorite recipe for macaroni salad because it is simple, contains just a few ingredients, but best of all because it is so yummy.
2 c. pasta, ditalini or macaroni
1 1/2 c. mayonnaise
2 stalks celery, finely chopped
4 green onions, chopped, green and white parts
1 1/2 T. mustard
1 T. onion powder
salt and pepper, to taste
4 hard boiled eggs, chopped plus more for garnish, if desired
paprika, for garnish
Cook pasta al dente according to package directions. Rinse under cold water; drain; set aside to cool.
In a medium bowl, whisk together mayonnaise, celery, green onion, mustard, onion powder, salt and pepper.
Place the cooked pasta in a large bowl; add mayonnaise mixture; stir until well combined; gently stir in the chopped egg.
Sprinkle with paprika, cover with plastic wrap, and chill for at least a couple of hours. Garnish with sliced hard boiled egg, if desired.
Serve.
