A cannoli is a great Italian dessert. Take a shortcut and make it with sugar cones instead of cannoli shells which can be hard to find.
1/3 c. roasted, salted pistachios, finely chopped
1 1/4 c. firm whole milk ricotta cheese, like Galbani
1/2 c. powdered sugar
6 T/ mini semi-sweet chocolate morsels
6 sugar ice cream cones
Finely chop the pistachios.
Stir cheese and sugar together until blended; stir in 4 T. each of the pistachios and semi-sweet chocolate morsels.
Divide cheese mixture evenly into the 6 cones. Top with remaining 4 t. nuts and 2 T. morsels.
Serve.
6 servings.
*Freshly sliced strawberries would be a nice addition to the cannoli cone filling, if desired.
