Kids and adults love tater tots, tacos and pizza, so why not combine them? The tater tots serve as the pizza crust and then the rest is full of traditional pizza and taco ingredients. It's makes for a fun meal for all.
30 oz. bag tater tots
1 lb. lean ground beef
¾ c. water
⅓ c. diced tomatoes
2 T. taco seasoning (1 packet)
1 T. minced onion
2 c. shredded cheese, like Cheddar or Mexican blend, divided
2 T. taco sauce
Toppings:
½ c. shredded lettuce
½ c. crushed Doritos or tortilla chips
⅓ c. diced tomatoes
¼ c. shredded cheese
Preheat oven to 425 degrees.
Grease bottom of sides of a 12 inch cast iron skillet or an oven safe pan. Cover bottom and sides of the skillet with tater tots.
Bake 15 minutes.
While tater tots are baking, brown ground beef; drain off and discard fat. Add water, diced tomatoes, taco seasoning, and minced onion; stir; cook 3-4 minutes, until thickened.
Remove tater tots from oven; flatten tots with a spatula.
Top with 1 c. shredded cheese and taco meat mixture; drizzle with taco sauce. Top with 1 c. shredded cheese.
Bake 10-15 minutes.
Remove from oven; top with shredded lettuce, crushed Doritos or tortilla chips, diced tomatoes, and shredded cheese.
Serve.
