The best hard boiled eggs are not actually boiled in the cooking process. They are brought to a rolling boil and then removed from the heat, covered, and allowed to sit for 12 minutes so that they are not green and rubbery.
12 large eggs
cold water to cover eggs
Carefully place eggs in a large saucepan; add enough cold water to cover by one inch; bring to a rolling boil. Cover; remove from heat. Let stand 12 minutes; drain; rinse under cool water.
Peel hard boiled eggs under cold running water to help wash away any small bits of shell and make it easier to peel.
Store unpeeled eggs in the refrigerator, up to 4 days.
