4 boneless, skinless chicken breasts
1 large Vidalia onion, chopped
10.5 oz. can cream of chicken soup
8 oz. box Zatarain's Yellow Rice Mix, cooked according to package directions
15 oz. can whole kernel corn, drained
1 c. shredded Cheddar cheese
Place a slow cooker liner in the cooker for easy clean up.
Set chicken breasts in bottom of the slow cooker. Scatter onion on top; spoon cream of chicken soup evenly over top. Cover; cook on Low 7-8 hours or on High 3-4 hours.
A few minutes before serving, add in cooked rice, corn, and cheese; stir to combine.
Serve hot.
