Make a healthy, quick salad that is easy to prepare and so delicious too. Serve it for your next gathering, picnic or take on your next camping trip.
Salad:
2 - 15 oz. cans chickpeas, drained and rinsed (good quality for better flavor)
1/4 c. freshly chopped Italian parsley
2/3 c. chopped bell pepper (mix of red, yellow and orange)
3/4 c. halved grape tomatoes
3 green onions, sliced
12 Kalamata olives, sliced in half
1/3 c. crumbled feta cheese
Dressing:
4 T. extra-virgin olive oil
2 T. plain yogurt
1 T. freshly squeezed lemon juice
1 T. red wine vinegar
1 small garlic clove, minced
1/4 t. cumin
salt and pepper, to taste
In a large bowl, toss together all salad ingredients.
In another bowl, whisk together all dressing ingredients.
Drizzle the dressing over the salad; toss. Transfer to a serving bowl; drizzle juices on top. Refrigerate until ready to serve.
