Make this heavenly vegetarian dish with all of your favorite ingredients. You can change up the ingredients to your liking and serve it as a salad, a side dish or even as a dip with tortilla chips.
3 avocados, chopped
15 1/2 oz. can black beans, drained and rinsed
10 oz. package frozen white corn, cooked and drained or fresh corn, if desired
1⁄4-1⁄2 c. chopped onion, your favorite
3 Roma tomatoes, chopped
1⁄4 c. freshly chopped cilantro
freshly squeezed juice of 1⁄2 lime
dash coarse salt
pepper, if desired
drizzle olive oil
Cook corn using your favorite method; drain; set aside to cool.
Squeeze the fresh juice on top of the chopped avocados to keep them from turning brown. Carefully stir all ingredients together.
Refrigerate several hours. Serve cold.
