Description

Jazz up those classic Rice Krispie treats for Easter and decorate them like an Easter basket. They are fun for you and the kids to make, they are festive and taste so good!

Ingredients

16 oz. bag marshmallows (mini or regular size work)
2 T. butter
7 c. Rice Krispies

Butter Cream Frosting:
½ c. unsalted butter
¼ c. milk
1 t. vanilla
3-4 c. powdered sugar, divided
green food coloring or food coloring of choice

Easter egg candies like jelly beans, Robin's eggs or M&Ms

Grease cupcake pans; set aside.

Melt marshmallows and butter in a microwave safe bowl, for about 2 minutes, keeping a close eye on it to make sure they aren't puffing up too much and falling out of the bowl. Stir together until well blended; pour in Rice Krispies; stir until well combined. Pour into prepared cupcake pan; press down with wax paper.
Let set for 30 minutes.

Frosting:
Combine butter, milk, vanilla and 2 c. powdered sugar in a large bowl; mix until smooth and creamy, about 5 minutes. Add the remaining powdered sugar and food coloring of your choice.

Pipe frosting into cookie cups; decorate with Easter egg candies.

Makes 16 cups.
