Cheese Potato Pancakes

Description

Serve these cheesy potato pancakes as a side dish, as the main dish or even as a snack. They are are soft on the inside, nice and crispy on the outside and delicious all over! They're simple and quick to make and can be ready in less than 30 minutes.

Ingredients

2 lb. potatoes, peeled and grated (any kind, but red potatoes are great)
1/2 c. Cheddar cheese
1/2 c. Parmesan cheese
3 green onions, chopped
1/2 t. garlic powder
1/4 c. all-purpose flour
2 eggs, beaten
1 t. salt
freshly ground black pepper
1/4 c. oil, for frying

Dipping sauce:
1/2 c. sour cream
1 T. chili garlic sauce (in the Asian section of the grocery store)

Wash and dry the potatoes. Use the large holes of the grater to grate potatoes and cheese. Transfer the potatoes into a kitchen towel; squeeze out as much liquid as possible.

Place grated potatoes in a large bowl; add cheeses, onion, garlic powder, flour, eggs, salt and pepper. Stir to combine.

Heat oil in a large skillet over medium high heat. Use an ice cream scoop to measure equal amounts of potato mixture; add to the pan; use the back of a spoon to flatten out the patties. Cook about 3 or 4 patties at a time, until browned, about 4 minutes per side. Repeat with remaining potato mixture.

Transfer the pancakes to a plate/platter lined with paper towels to drain excess oil.

Dipping sauce:
Mix sour cream with chili garlic sauce.

Serve the potato pancakes with a side of the dipping sauce while pancakes are still hot/warm.

Makes about 15 potato pancakes.
