Make mashed potatoes easy with this great mashed potato bake. It's the perfect dish to take to a potluck or make ahead to serve for a special occasion. They are yummy, cheesy and so good. Just be sure to make enough for seconds.
butter or non-stick cooking spray
4 lb. potatoes (Russet or gold potatoes are best)
1/2 c. sour cream
3/4 c. milk
1/4 c. (1/2 stick) butter, melted
1 c. shredded Cheddar cheese
1 c. shredded Mozzarella cheese
1 c. shredded Parmesan, divided
Kosher salt, to taste
freshly ground black pepper, to taste
1/2 c. plain breadcrumbs or panko breadcrumbs
Preheat oven to 400 degrees. Grease 9 x 13 inch casserole dish with butter or non-stick cooking spray.
Wash and peel potatoes; cut into 1 inch pieces. Cook potatoes in a large pot of well salted boiling water until soft and tender, about 10-15 minutes, depending on the size and type of potato. Drain potatoes; place in a large bowl or place back into the same pot. Add sour cream, milk and melted butter. Mash potatoes to desired texture.
Mix in Cheddar and Mozzarella cheeses and 3/4 c. Parmesan, reserving about 1/4 c. Parmesan for topping. Season with salt and pepper, to taste.
Transfer potatoes to the prepared baking dish. Sprinkle the remaining Parmesan cheese and breadcrumbs over the mashed potatoes. Bake, uncovered, until cheese/breadcrumb topping is golden brown, about 20 minutes.
