1 stick butter, softened
3/4 c. granulated sugar
2 large or extra large eggs
1/2 t. vanilla extract
2 T. freshly squeezed lemon juice
1 1/2 T. lemon zest
1/2 c. all purpose flour
1/4 c. whole wheat pastry flour
1/4 t. Kosher or sea salt
1/4 t. baking soda
1/4 t. baking powder
Lemon glaze:
1/2 c. sifted powdered sugar
2 T. freshly squeezed lemon juice
1/2 t. cold water, if needed
lemon zest, for garnish
Preheat oven to 340 degrees. Lightly spray a non-stick 8 or 9 inch square pan with cooking spray; set aside.
In a large mixing bowl, using a hand held mixer or stand mixer, beat the softened butter with the sugar until fluffy. Add eggs one at a time until well incorporated; add vanilla extract; add lemon juice and zest; mix just until combined.
In a separate bowl, whisk together flours, salt, baking soda and baking powder; add flour mixture into the wet ingredients; beat at medium speed for 1 - 2 minutes, until nice and creamy.
Pour batter into the prepared pan. Bake for 20-24 minutes, trying not to over-bake. The edges should turn lightly golden brown and a toothpick inserted in the center should have moist crumbs.
Let cool on a wire rack for at least 20 minutes. While cooling, stir together the glaze ingredients. Spread the glaze over the brownies; garnish with the lemon zest.
Cut into 16 slices. Serve.
