This super simple salad perfect to serve at a weeknight dinner or for a gathering of friends and family. It's quick to prepare and is healthy and delicious, as well.
2 c. red cherry tomatoes, sliced in halves
2 c. orange cherry tomatoes, sliced in halves
1 large Hass avocado, peeled and sliced
1 cucumber, peeled and chopped
1/2 c. finely chopped fresh parsley
2 T. apple cider vinegar
freshly squeezed juice of 1 large lime
salt and pepper, to taste
Mix all ingredients in a bowl.
You can serve right away, or you an let it sit about 30 minutes to marinate.
10 servings.
The salad should keep about 4 days covered in the refrigerator.
