Don't serve green beans that are boring when you can serve these delicious little bundles of joy. They are easy enough for weeknight dinners and elegant enough to serve guests.
1 1/2 lb. green beans (6-8 beans per bundle)
½ t. baking soda
6 slices bacon
¼ t. garlic powder
salt and pepper, to taste
1 T. brown sugar
1 T. water
Preheat oven to 375 degrees.
Cook bacon on the stovetop until slightly cooked but not crispy. Reserve bacon drippings.
While bacon is cooking, trim off ends and wash green beans.
Bring a large pot of water to a boil; add baking soda; add green beans. Cook 3 minutes until tender crisp. Remove from boiling water; drain; place in a bowl of ice water to stop cooking.
Dab beans dry; toss with 2 t. reserved bacon drippings, garlic powder, and salt and pepper, to taste.
Cut each slice of bacon in half; wrap around about 6-8 green beans; secure with a wooden toothpick that has been soaked in water; place on a parchment lined baking pan.
Combine brown sugar with 1 T.water; lightly brush over each bundle.
Roast 20-22 minutes or until bacon is crisp and beans are lightly roasted.
Serve.
