Roasted Mushrooms with Herbs

Description

Start with a mixture of fresh mushrooms, add a few simple, basic ingredients and you wind up with a wonderful meatless dish.

Ingredients

2 lb. mixed fresh mushrooms (button, shiitake, cremini, baby portobello)
2 garlic cloves, chopped
1/2 c. olive oil
salt and pepper
1 t. chopped fresh rosemary
1 t. chopped fresh sage
1/4 c. chopped fresh parsley
1 t. balsamic vinegar

Preheat oven to 350 degrees.

Wipe off mushrooms with a clean, damp cloth; trim/discard stems. Slice mushrooms into pieces no larger than 2 inches in size.

In a large baking dish, mix olive oil with garlic, herbs and seasonings. Add mushrooms; mix well, coating mushrooms with the flavored oil.

Bake 30 - 40 minutes or until cooked through.

Remove from oven. Drizzle with balsamic vinegar.

Serve.

4-6 servings.
