Drumstick Ice Cream Pie

Description

Not a baker but still want a delicious dessert? Making this ice cream pie is easy and it's so good. It is reminiscent of the Drumstick ice cream that we all loved growing up.

Ingredients

Crust:
5 oz. package of Joy ice cream sugar cones, about 12 (not waffle cones)
6 T. butter, melted

Ganache:
1/2 c. heavy cream
1/2 c. dark chocolate chips

1 1/2 qt. vanilla ice cream (you may not need the whole thing)

Chocolate Topping:
2 c. dark chocolate chips
6 T. coconut oil

1/2 c. chopped walnuts

Crust:
Place cones in a food processor; process until finely ground, making about 1 1/2 c. of crumbs. Mix crumbs with melted butter, tossing while adding the butter, until completely mixed.

Lightly spray an 8 or 9 inch pie plate with cooking spray; gently but firmly press the crumbs into the bottom and up the sides. Put the crust in the freezer while making the ganache.

Ganache:
Heat the heavy cream until it just comes to a simmer; remove from heat; add the dark chocolate; let sit for 5 minutes; stir until smooth; cool slightly; pour into the cold crust; push it up the sides a bit. Place back in the freezer for 30 minutes.

Put ice cream container on the counter for about 10-15 minutes to soften. Spoon the ice cream into the cold pie shell; smooth out. Fill the shell, slightly mounding in the center. (There may be ice cream left over.) Place the pie back in the freezer until the ice cream is hardened.

Chocolate topping:
Melt the dark chocolate and coconut oil in the microwave, heating for 1 minute, then stir. Heat in 15 second intervals, if necessary, stirring in between to melt completely.

Pour the chocolate over the ice cream to cover completely; immediately sprinkle the walnuts over the surface before the chocolate hardens. Put the pie back in the freezer until ready to serve.

Remove a few minutes ahead of serving time to make cutting easier.

*Alternate method: Don't coat the pie with the chocolate topping ahead of time. Instead, cut the ice cream in slices, and then, just before serving, coat with the chocolate shell.

**Magic Shell in a bottle could be used for the chocolate topping, for convenience if desired.
