Soup doesn't have to be fancy to be good. This one is made with many ingredients that you probably already have on hand like hamburger, potatoes, onion, canned tomatoes and seasonings. Use any vegetables that your family prefers. This soup is even better
1 lb. lean ground beef
1 onion, diced
2-3 cloves garlic, minced
2 medium potatoes, peeled and diced
3½ c. beef stock/broth
28 oz. can diced tomatoes, with their juices
1 can condensed tomato soup
2 t. Worcestershire sauce
1 t. Italian seasoning
1 bay leaf
salt and pepper, to taste
3 c. mixed vegetables, your choice of mix, fresh, frozen or left-over
Brown ground beef, onion and garlic until no pink remains in meat; drain off and discard fat.
Add potatoes, stock/broth, tomatoes, tomato soup, Worcestershire sauce, Italian seasoning and bay leaf. Simmer covered for 10 minutes; stir in vegetables; simmer 15-20 minutes or until potatoes are tender.
Remove bay leaf. Serve.
