Description
Prepare a delicious summertime salsa for your family and guests. Make it more fun and serve it in a hollowed out watermelon half. It can also be served on fish, chicken or steak or with rice.
Ingredients
- 1 1/2 t. lime zest, from about 1 lime
- 1/4 c. freshly squeezed lime juice, from about 3 limes
- 1 T. sugar
- 3/4 t. freshly ground black pepper
- 3 c. seeded and finely chopped watermelon
- 1 cucumber, peeled, seeded and diced
- 1 mango, peeled and diced
- 1-2 jalapeno peppers, seeded and minced, or to taste
- 1 small red onion, finely chopped
- 8 fresh basil leaves, finely chopped or cilantro, if preferred
- 1/2 t. garlic salt
- graham crackers, tortilla or pita chips, for serving
Steps
- In a bowl, stir together lime zest and juice, sugar and pepper. Add watermelon, cucumber, mango, jalapeno, onion and basil; toss gently.
- Chill until ready to serve.
- Add the garlic salt just before serving. Serve with choice of chips. Serve within 4 hours of preparation.
