Make this fantastic salad that has the 3 c's- crunchy, crispy and chewy. You can make in a day in advance to save time. It lasts for days in the refrigerator.
Dressing:
1 c. mayonnaise
⅓ c. sour cream
1 T. cider vinegar
1 T. lemon juice
1 T. sugar
1 t. poppy seeds
salt and pepper, to taste
8 c. broccoli, washed and chopped
4 green onions, sliced or ¼ c. chopped red onion
½ c. dried cranberries
1 green apple, diced
2 t. freshly squeezed lemon juice
⅓ c. chopped pecans, optional
Combine all dressing ingredients in a small bowl; mix well. It's best to let the dressing sit for about 1 hour for all of the flavors to mix.
Chop the apple; toss with freshly squeezed lemon juice; place in a large bowl with remaining ingredients. Toss with dressing until well mixed. Refrigerate for at least 1 hour before serving.
