Make your tuna or even chicken salad healthier without mayonnaise and even better tasting with this wonderful recipe. It's juicy, full of flavor and will become a new favorite. Serve as a side salad, on bread or crackers or in lettuce boats.
Salad:
15 oz. tuna in oil, drained and flaked (canned chicken would work as well)
1 English cucumber, peeled and sliced
2 large or 3 medium avocados, peeled, pitted and sliced
1 small to medium red onion, thinly sliced
½ small bunch of cilantro or 1/4 c. chopped
2 T. freshly squeezed lemon juice or more to squeeze on the avocado to keep it from turning brown
2 T. extra virgin olive oil
1 t. sea salt, or to taste
⅛ t. black pepper
In a large bowl, combine sliced cucumber, sliced avocado, thinly sliced red onion, drained tuna and cilantro.
Drizzle salad ingredients with lemon juice, olive oil, salt and pepper, or season to taste. Toss to combine. Serve.
4-6 servings.
