Instead of the typical chocolate or lemon lush, try a Butterfinger, Peanut Butter and Chocolate Lush instead. It will be a huge hit to bring to a pot luck or serve your guests at home. Just be sure to make enough to go around for everyone.
32 Oreo cookies, crushed with the cream filling
5 T. butter, melted
8 oz. package cream cheese, softened
1 c. powdered sugar
3/4 c. creamy peanut butter
6 oz. container Cool Whip, divided
11.5 oz. bag mini Butterfingers, divided
15.9 oz. box instant chocolate pudding mix
2 c. milk
Crust: In a medium bowl, stir together crushed Oreo cookies and melted butter. Transfer to a 9 X 13 inch baking dish; press firmly all along the bottom. Refrigerate while making the next layer.
Using an electric mixer, beat cream cheese; gradually add powdered sugar; beat in peanut butter; fold in 1 c. Cool Whip. Crush 6 mini Butterfingers; fold into peanut butter mixture. Spread peanut butter mixture evenly over Oreo crust.
In a medium bowl, whisk together pudding mix and milk; let sit to thicken for 1-2 minutes; pour over peanut butter layer.
Spread remaining Cool Whip on top. Crush remaining Butterfingers; sprinkle on top.
Refrigerate until ready to serve.
18 servings.
*The Butterfingers are easier to crush while still in the wrapper. Just use a rolling pin and tap them a few times.
