Summer is the time of get-togethers, picnics, BBQ's and pool parties. You definitely want a no-bake go to recipe to serve a small crowd. The one is easier and quicker to make than the classic tiramisu and isn't as decadent either.
3 T. instant espresso powder
1 c. cold water
1/2 c. powdered sugar (plus 1 T. for the coffee)
20 crisp Italian ladyfinger biscuits
2/3 c. cold heavy cream
1 t. vanilla extract
2/3 c. marscapone cheese, at room temperature
cocoa powder, for dusting
chocolate shavings from a chocolate bar, for garnish
Mix espresso powder with 1 c. cold water; sweeten with 1 T. powdered sugar. Pour the cold coffee into a shallow bowl; dip each biscuit, first one side and then the other. Just wet the cookies, don't let them soak, 2 seconds per side is good.
Arrange the ladyfingers the best that you can in 2 rows of 10 in a 9 x 13 pan. You may need to cut them to fit.
Whip the cream until it starts to thicken; beat in remaining powdered sugar and vanilla, beating until the cream forms stiff peaks. Don't beat too long, you don't want to wind up with butter! Gently fold in the marscapone until well incorporated. The cheese must be soft or this won't work.
The ladyfingers should feel soft to the touch. If they feel hard at all, drizzle a touch more coffee over them. Spoon the whipped cream mixture onto the ladyfingers; smooth out evenly across the surface. Cover; refrigerate 3 hours or until ready to serve.
Just before serving, garnish with sifted cocoa powder and chocolate curls.
Serve.
8-10 servings.
