Make this versatile fresh and bright, delicious dressing that can be served on salads or vegetables, meat or fish, or even as a possible marinade.
3 T. freshly squeezed lemon juice
3 T. Dijon mustard
1 t. honey
1 medium clove garlic, finely minced
½ t. Kosher salt
⅛ t. freshly ground black pepper
½ c. sunflower oil, or other mild flavored oil
2 T. finely chopped fresh dill
Whisk together the lemon juice, Dijon mustard, honey, garlic, salt and pepper until completely blended. Add oil in a slow steady stream, whisking constantly until thick and creamy. Add dill; stir well.
Keep refrigerated.
