Description
Tuna salad has never been better. Instead of mayonnaise make it with ripe, mashed avocado, celery, red onion, a little olive oil, and freshly squeezed lemon juice. Serve it on your favorite bread or toast.
Ingredients
- 5 oz. can tuna, packed in olive oil, drained
- 1/2 ripe avocado, peeled and roughly chopped
- 1/2 c. minced or copped celery
- 1/4 c. minced or chopped red onion
- 1 T. olive oil
- 2 t. freshly squeezed lemon or lime juice
- 1 t. lemon or lime zest
- 2 T. freshly chopped cilantro or parsley
- 1/2 t. kosher salt
- freshly ground black pepper
- 4 pieces bread or toast
Steps
- Place all ingredients in a medium bowl; mix with a fork; mash the avocado; break up the chunks of tuna; mix until all ingredients are well combined. Add more oil and season with salt and pepper, as necessary.
- Serve on your favorite bread or toast.
- 2 sandwiches.
