If you are searching for an easy, tasty appetizer for your next get together, look no further. This dip marries the classic spinach dip that everyone loves with the wonderful flavors of a Caesar salad.
8 oz. cream cheese, softened to room temperature
1 c. shredded Mozzarella cheese
1/2 c. finely grated Parmesan cheese
1/2 c. sun-dried tomatoes
4 oz. frozen chopped spinach, defrosted and squeezed dry
1/2 c. Caesar dressing
freshly squeezed juice from 1/2 lemon
1/2 t. freshly chopped thyme leaves
Little gem lettuce or romaine hearts, for serving
baguette, sliced and toasted
Preheat oven to 350 degrees. Grease a small baking dish with butter or non-stick cooking spray.
Mix all ingredients, except for the lettuce and bread, in a large bowl until evenly combined. Transfer to the prepared baking dish.
Bake until cheese is bubbly and starting to turn golden, about 20 minutes.
Serve warm with toasted bread and lettuce or other dippers, as desired.
