Enjoy the taste and flavors of fried pickles without actually frying anything. It's so much easier and healthier than frying too. Serve with crackers or your favorite dippers.
1/2 c. softened cream cheese
1 c. shredded Parmesan cheese
1 c. mayonnaise
2 cloves garlic, minced
1 c. diced dill pickles
1/2 c. breadcrumbs
1/2 c. Panko breadcrumbs
1/4 c. grated Parmesan cheese
2 T. butter, melted
Preheat oven to 400 degrees. Spray a small baking dish or ramekin with non-stick spray; set aside.
In the bowl of a food processor, combine cream cheese, Parmesan cheese, mayonnaise, garlic and pickles. Pulse just until combined. Pour cheese into the prepared dish.
Toss together breadcrumbs and Panko breadcrumbs; sprinkle over the dip. Drizzle melted butter over breadcrumbs.
Bake for 15 minutes, or until hot and bubbly and breading turns a golden brown.
