Treat your family or friends to a wonderful bread with fresh strawberries and ripe bananas. It will go fast, so be sure to make enough to go around.
1 stick butter, softened
1 c. granulated sugar
2 large eggs, beaten
3 ripe bananas, mashed
2 c. flour
1 t. baking soda
½ t. salt
1½ c. fresh strawberries, chopped and then tossed in 1 T. flour
Preheat oven to 375 degrees. Spray two 9 x 5 loaf pans with non-stick spray; set aside.
In a large bowl, using an electric or stand mixer with a paddle attachment, cream butter and sugar together until light and fluffy.
In a small bowl, use a fork to beat eggs. Add eggs to sugar mixture; beat until combined. Add mashed bananas; mix until combined.
Sift dry ingredients together, flour, baking soda and salt. Slowly add sifted dry ingredients to banana mixture; mix until flour is just combined. DO NOT OVERMIX. Fold in the floured covered strawberries.
Pour batter into prepared loaf pans. Bake for 15 minutes. REDUCE heat to 350 degrees; bake an additional 30 minutes, until edges are slightly brown or until wooden toothpick inserted into center comes out clean.
Let cool completely before removing from loaf pans.
