Mexican Street Corn on the Cob

Description

Don't be satisfied with making your corn on the cob the traditional way with just butter. Try something different and make your corn on the grill with a wonderful bbq seasoning. cilantro, garlic and lime in a wonderful sour cream and mayonnaise mixture.

Ingredients

All-Purpose Barbecue Seasoning (about 2 c.)
1/2 c. granulated sugar
1/2 c. sweet paprika
1/4 c. salt
2 T. granulated garlic
2 T. granulated onion
1/3 c. dark brown sugar
1 t. dried oregano
1/4 t. fennel seed powder
1 t. cumin
2 t. chili powder
1/2 t. cayenne
1/2 t. dried thyme
2 T. freshly ground black pepper
2 t. hatch chili powder

Corn:
1/2 c. sour cream
1/2 c. mayonnaise
1/2 c. chopped cilantro
1 clove garlic, minced
1 lime, zested and juiced
6 ears sweet corn on the cob, husks removed
1 T. all-purpose barbecue seasoning (see recipe)
1 c. crumbled cotija cheese
6 lime wedges
non-stick cooking spray

All-Purpose Barbecue Seasoning:
Combine all ingredients in a mixing bowl; transfer to a food processor; pulse until all ingredients are evenly incorporated; set aside.

Corn:
Clean, oil and preheat grill to High.

In a mixing bowl, combine sour cream, mayonnaise, chopped cilantro, minced garlic, lime zest and lime juice; set aside.

Once the grill comes up to temperature, grill corn for approximately 2 minutes per side, creating a nice charred exterior.

When the corn has been completely cooked, transfer to serving dish; generously spoon or brush on the cream mixture to evenly coat the corn.

Crumble the cotija cheese on corn; season with all-purpose barbecue seasoning.

Serve with additional lime wedges.

Makes 6.
