This is definitely a dessert that you will have to restrain yourself from eating too much. It's a simple recipe to make and once you do, it will be a keeper.
½ c. butter, softened
1 c. sugar
2 eggs
¾ c. flour
¼ t. baking soda
¼ t. salt
1¼ c. crushed pineapple, well drained
powdered sugar, for garnish
Preheat oven to 350 degrees. Grease an 8 x 8 inch or a 9 x 9 inch pan.
In a large bowl or the bowl of a stand mixer, cream together butter, sugar and eggs. Add in flour, baking soda and salt; mix. Stir or gently mix in pineapple.
Spread into the prepared pan.
Bake for 28-33 minutes until done. Allow to cool in the pan for 10 minutes.
Sprinkle with powdered sugar. Cut into squares. Serve.
