You'll be surprised at how this rice cauliflower tastes like rice. So now you can make a healthier version of fried rice with no rice at all. Serve it as a side dish, or add some protein like chicken, beef, pork or shrimp for a quick main dish.
1 T. vegetable oil
1 large garlic clove, crushed
1/2 t. freshly grated ginger
12 oz. package frozen Riced Cauliflower Medley
2 T. soy sauce
1 egg, lightly scrambled
Heat vegetable oil in a large non-stick skillet; cook garlic and ginger over medium heat for 1 minute. Add Riced Cauliflower Medley; cook 5 minutes, stirring frequently, or until vegetables are tender-crisp. Stir in soy sauce; cook 1 minute. Stir in cooked egg; continue cooking 1 minute or until heated through.
