Don't turn on your oven if you don't have to just to get a delicious dessert. Use your microwave to heat corn syrup and brown sugar and chocolate and just let the cereal and peanuts harden with the melted goodness.
6 c. Rice Chex cereal
1 1/4 c. roasted, salted peanuts, chopped
1 c. brown sugar
1 c. corn syrup
1 c. creamy peanut butter
1 T. pure vanilla extract
1 t. salt
6 oz. milk chocolate chips
Line a 9 x 13 inch baking pan with parchment paper; set aside.
In a large bowl, gently combine the cereal and peanuts; set aside.
In a 4 cup glass measuring cup, stir together corn syrup and brown sugar; microwave on high for 2 - 3 minutes, or until mixture is bubbly.
Stir in peanut butter, vanilla and salt until blended.
Pour the mixture over the cereal and nuts; gently stir to evenly coat. Pour the caramel coated cereal mixture into the prepared pan; gently spread out and press evenly into the pan. Let cool to room temperature.
Melt chocolate chips in a microwave-safe bowl; drizzle the melted chocolate over the top of the bars. Allow the chocolate to harden.
Cut into bars. Store the bars in an airtight container.
