Description
Make healthy salmon and serve it for a special dinner. It's easy to make, has a wonderful taste and makes an elegant entree and a stunning presentation.
Ingredients
- 2 salmon fillets (5–6 oz. each)
- 1 T. fresh basil, finely chopped
- 2 t. fresh thyme, finely chopped, divided
- 2 t. chipotle roasted garlic seasoning, divided
- 3 t. extra-virgin olive oil, divided
- 1 c. fresh cherries, pitted
- 1 t. minced garlic
- 1 t. red wine vinegar
- 2 t. sugar
Steps
- Preheat grill. (Can be an outside grill or stove top grill pan.)
- Place salmon in a large zip-top bag.
- Chop herbs finely; in a small bowl, combine basil, thyme, 1 t. chipotle seasoning and 2 t. oil. Place herb mixture in bag with salmon; seal bag; knead lightly to coat fillets.
