Instead of making individual cookies, make these irresistible cookie bars. They are easier to make than cookies, but you still get the same ooey, gooey taste.
Crust:
1¼ c. all-purpose flour
1 c. old-fashioned oats
2 c. flaked coconut
½ t. salt
¾ c. brown sugar
1 c. butter, softened
1 egg, lightly beaten
12 oz. semi-sweet chocolate chips
Filling:
14 oz. sweetened condensed milk
¼ c. Karo Light Corn Syrup
8 oz. Heath toffee bits
Preheat oven to 350 degrees. Lightly grease a 13 x 9 inch baking dish.
Crust:
Combine flour, oats, coconut and brown sugar in a large bowl of an electric mixer; mix on low speed. Add butter; continue mixing until a crumbly dough forms; add egg; mix well; stir in chocolate chips.
Reserve 1 1/2 c. of dough for topping. Press remaining dough into bottom the prepared baking dish. Bake 10 minutes.
Filling:
In a small bowl, combine sweetened condensed milk and corn syrup; mix until combined. Top evenly over hot crust. Sprinkle with toffee bits. Evenly sprinkle on reserved crust mixture.
Bake 25 - 30 minutes until golden brown. Cool. Cut into 24 bars.
