This is an easy meal to make that will comfort and satisfy everyone at the dinner table. It's made with penne pasta, crumbled bacon, Cheddar cheese and chicken in a rich creamy sauce. Serve wth a side salad and a veggie.
Chicken:
1 T. butter
2 large boneless, skinless chicken breasts, cubed
salt and pepper, to taste
6 slices bacon, cooked and chopped
Pasta:
1 box penne pasta
1 T. butter
2 T. flour
1 packet Ranch dressing mix
2 c. whole milk
1 c. shredded Cheddar cheese
1/4 c. chopped parsley
Cook pasta according to package instructions; drain; set aside.
Chicken:
In a deep skillet over medium high heat, melt butter; add chicken; season with salt and pepper; cook until chicken is cooked through; add bacon; stir to combine. Remove from heat; set chicken and bacon aside.
Pasta:
In the same skillet, make the sauce. Melt butter; whisk together with flour and Ranch dressing mix; gradually add milk, whisking constantly until combined; simmer 5 minutes. Add Cheddar cheese; stir until cheese is completely melted; stir in chopped parsley. Remove from heat.
Add cooked pasta to cheese sauce; stir until pasta is fully coated; add chicken and bacon; stir to combine.
Serve.
