Make your own delicious Nacho cheese sauce from scratch in your own kitchen. It has better ingredients and takes just a few minutes to make. Serve with your favorite Nacho chips or fresh veggies.
2 T. butter
2 T. flour
1 c. whole milk
1/4 t. salt
1/8 t. cayenne pepper
8 oz. block of good quality sharp Cheddar cheese, freshly grated (like Cracker Barrel brand)*
Melt butter in a medium size skillet over medium heat. When butter is melted, add flour; whisk until it combines into a smooth blond paste and starts to bubble around the edges.
Add the milk to the skillet; continue whisking. When milk is incorporated, raise heat to high; bring to a boil; quickly lower the heat to a simmer; allow sauce to thicken slightly. Add cayenne pepper and salt; whisk to combine.
Add the cheese; gently stir to allow cheese to melt. When cheese is completely melted and mixture is smooth, it's ready to serve.
Serve immediately, as the sauce will get firm as it sits.
* The store bought bags of shredded cheese have additives in them to prevent clumping, so if you don’t shred your own cheese, the sauce won’t be smooth.
To reheat: ONLY reheat on the stovetop in a pot or skillet over medium low heat until warm and melted. (NO microwave) Add 2 T. water; whisk until cheese looks smooth and creamy.
