Ingredients
- 4 large chicken breasts
- 1 T. olive oil
- 4 large white or cremini mushrooms, sliced
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- ¼ white onion, diced
- ½ c. shredded pepper jack cheese
- 4 t. cajun seasoning* (use ingredients below or use store bought)
- 4 T. butter, divided
- Cajun seasoning:
- 1 t. onion powder
- 1 t. garlic powder
- 1 t. oregano
- 1 t. basil
- 1/2 t. thyme
- 1/2 t. black pepper
- 1/2 t. white pepper (if you don’t have it, just substitute black pepper)
- 1/2 t. cayenne pepper
- 2 1/4 t. paprika
- 1 1/4 t. salt
Steps
- Preheat oven to 400 degrees. Lightly grease a 9 x 13 pan.
- Pound out the chicken breasts until about ¼-inch thick.
- Heat olive oil in a heavy skillet over medium-high heat; saute mushrooms, bell peppers and onion for about 5 minutes.
