Description
You will want to serve this awesome, light version of chicken parmesan cheese. Not only is it light, it's made in just one skillet and it can be on the table in a little over 30 minutes.
Ingredients
- 1/2 c. freshly grated Parmesan cheese, divided
- 1/3 c. dry breadcrumbs
- 1 t. dried oregano
- 1 t. dried basil
- 1/4 t. salt, divided
- 1 large egg white, lightly beaten
- 1 1/2 lb. chicken breast tenders
- 1 T. butter
- 1 T. olive oil
- 12 oz. angel hair pasta, cooked and drained
- 1 1/2 - 2 c. Classico Tomato Basil marinara sauce
- 1 T. balsamic vinegar
- 1/4 t. freshly ground black pepper
- 1/2 c. shredded Provolone or Mozzarella cheese
Steps
- Preheat the oven broiler.
- Combine 3 T. Parmesan cheese, breadcrumbs, oregano, basil and 1/8 t. salt in a shallow bowl. Place the beaten egg white in a separate shallow bowl.
- Heat butter with olive oil in a large non-stick, oven-safe skillet, like a cast iron or stainless steel skillet, over medium heat. Dip each chicken piece in the egg white, then coat them in the breadcrumb mixture. Add the chicken to the skillet; cook 3 minutes on each side or until cooked through.
