Crockpot Ranch Chicken and Mushrooms

Description

The zucchini and squash are delicious in this dish, but you can omit them if you would like. You can serve it on either rice or pasta, maybe even mashed potatoes.

Ingredients

2 lb. chicken breasts, cut into bite-sized pieces
1 can mushrooms
1 c. chicken broth
4 T. butter, optional
2 packets Ranch dry seasoning mix
3 T. cornstarch plus ¼ c. cold water
1 onion, sliced
1 zucchini, diced, optional
1 squash, diced, optional

Line a crock pot with a crock pot liner for easy clean up. Spray the liner with non-stick cooking spray.

Cut the chicken into bite-sized pieces; slice the onions. Dice the zucchini and squash, using.

Place the vegetables and chicken in the crock pot. Pour the chicken broth on the top; sprinkle on the Ranch dressing seasoning mix. Cover; cook 4 - 6 hours.

About 30 - 45 minutes before serving, mix the cornstarch and water in a separate bowl; slowly pour into the crock pot while stirring. Cover; cook on high until thick and bubbly, about 30 - 45 minutes.

Serve over rice, pasta or even possibly mashed potatoes.
