No time to make a healthy breakfast before school or work? Make these healthy cookies in advance and enjoy on those busy mornings when you have to run out of the door to avoid being late. Not only are they healthy, but they are yummy too!
1 c. creamy peanut butter or other nut butter
1/4 c. honey
1 t. vanilla extract
2 medium ripe bananas, mashed
1/2 t. salt
1 t. ground cinnamon
2 1/4 c. quick oats
1/2 c. dried cranberries, raisins or other dried fruit
2/3 c. chopped nuts, like almonds, walnuts or pistachios or mixture of nuts
Preheat the oven to 325 degrees. Line a baking sheet with parchment paper or a Silpat.
In the bowl of a stand mixer fitted with the paddle attachment, beat together the peanut butter, honey, vanilla extract, mashed bananas, salt and cinnamon. Add oats, cranberries and nuts; mix until combined.
Scoop about 1/4 c. mounds of dough onto the baking sheet, flattening each cookie slightly. The cookies will not spread while baking, so they can be spaced relatively close together.
Bake for 14 - 16 minutes until golden brown but still soft.
Remove the cookies from the oven; allow them to cool for 5 minutes on the baking sheet before transferring them to a rack to cool completely.
Makes about 12 cookies.
