Description
Use ingredients that you may already have to prepare a simple Greek marinade to make a wonderful, grilled chicken. You can serve the chicken as the entree or in pita bread for sandwiches or in a pasta salad.
Ingredients
- 4 chicken breasts
- 1/4 c. olive oil
- 1/4 c. freshly squeezed lemon juice
- 1 T. garlic finely chopped or paste
- 1 t. ginger finely chopped or paste
- 1 T. oregano
- 1 t. rosemary
- 1 t. thyme
- 1 t. parsley
- 1/2 t. paprika or red chili flakes, or to taste
- 1 t. salt
- 1/2 t. pepper
- freshly chopped basil, for garnish
Steps
- In a large mixing bowl, mix together olive oil, lemon juice, garlic, ginger, herbs, paprika, salt and pepper.
- Add chicken breasts; make sure chicken is fully coated in the marinade. Cover; marinate in refrigerator for at least 1 hour to no more than 8 hours.
- When ready to grill, preheat grill.
