Get the distinctive taste of Key Lime Pie from Florida with this delicious cake. It makes a great snack, dessert or even breakfast coffee cake.
18.25 oz. Box Betty Crocker® Supermoist® Vanilla Cake Mix, reserving 1 c. for topping
1/2 c. butter, melted
1 egg
Filling:
8 oz. package cream cheese, softened
14 oz. can sweetened condensed milk (NOT evaporated)
3/4 c. Key Lime Juice
2 eggs, beaten
Topping:
reserved 1 c. cake mix
1 c. chopped pecans, walnuts or combination of both
3 T. butter, softened
powdered sugar, for garnish
Cool Whip, optional
lime zest, optional
Preheat oven to 350 degrees. Spray a 13 x 9 inch pan with cooking spray.
In small bowl, reserve 1 c. dry cake mix for the topping; set aside.
In a medium bowl, mix remaining cake mix, melted butter and 1 egg until well combined. Press in bottom of the prepared pan; set aside.
Filling:
In a large bowl, beat cream cheese, sweetened condensed milk, lime juice and 2 eggs with electric mixer on medium speed until smooth. Pour filling evenly over base in the pan.
Topping:
With a fork, mix reserved cake mix with pecans and 3 T. softened butter until crumbly; sprinkle evenly over filling.
Bake about 45 minutes or until golden brown. Remove from oven; cool in pan at least 20 minutes.
Sprinkle with powdered sugar. Serve.
