Ingredients
- 4 thin boneless, skinless cutlets, 4 oz. each (or turkey cutlets)
- 1/2 t. kosher salt
- pepper, to taste
- 1/4 c. all-purpose flour
- 1/2 t. butter
- 1 1/2 t. olive oil
- 2/3 c. reduced-sodium chicken stock/broth
- 1 T. freshly squeezed lemon juice
- 1/2 T. Dijon mustard
- 4 thin slices low-sodium deli ham, like Boar’s Head (3 oz. total)
- 4 slices light Swiss Cheese, like Alpine Lace (3 oz. total)
- freshly chopped parsley, for garnish
Steps
- Season chicken with salt and pepper, to taste.
- Place flour in a shallow dish; dredge chicken in flour on both sides, shaking off excess; reserve flour.
- In a small bowl, combine chicken stock/broth, lemon juice, Dijon mustard and 1 t. reserved flour; whisk until smooth.
