Heat up your grill and make this delicious, healthy, quick and easy chicken dinner for your family tonight. It's low calorie and low-carb too.
3 oz. package Delallo Garlic and Herb Veggie Marinade
1 1/2 lb. boneless, skinless thinly sliced chicken cutlets
1 1/4 t. kosher salt, divided
black pepper, to taste
1 lb. asparagus, about 1 bunch, tough ends removed and discarded
1 medium (8 oz.) zucchini, sliced 1/4-inch thick
1 medium yellow squash, sliced 1/4-inch thick
1 red bell pepper, seeded and sliced into strips
olive oil cooking spray
Shake marinade well.
Season chicken with 1/2 t. salt and 2 T. marinade for at least 1 hour or overnight.
Marinate the vegetables with the remaining marinade.
When ready to cook, heat a grill to medium-high, first making sure grates are clean and well oiled, to prevent sticking.
Put vegetables on a large grill tray or 2 smaller trays, season with 3/4 t. salt and black pepper. Cook, turning constantly until the edges are browned, about 8 minutes. Set aside on a platter.
Cook chicken about 4 - 5 minutes on each side, until grill marks appear and the chicken is cooked though. Transfer to a platter with the vegetables.
Serve.
