Description
This is a super easy and good for you breakfast. It's so good, you won't limit it to breakfast.
Ingredients
- 4 eggs
- splash of milk
- 2-4 T. each of chopped green pepper, mushrooms, onion, tomatoes
- shredded cheese
- black pepper
- salt
- 1 avocado, sliced
- crisply cooked bacon, crumbled, optional
Steps
- Preheat skillet on medium heat; cook veggies until tender and mushrooms have browned- a few minutes.
- Beat eggs and milk in a small bowl with a fork. Pour egg mixture into hot skillet with the veggies; scramble with a spatula, cooking until eggs are done, a few minutes.
- Cut avocado in half; remove and discard pit. Score lines lengthwise through avocado flesh. Scoop out of peel with a spoon; slice.
