Description
Get out that under used slow cooker and make a delicious Italian soup with Italian sausage, potatoes, onions, kale, chicken stock and seasonings. You will be glad that you did.
Ingredients
- 1 lb. ground hot Italian sausage
- 1 bag Simply Potatoes, diced potatoes and onions (or substitute with 1 diced yellow onion and 4 russet potatoes, peeled and cubed)
- 2 cloves large garlic, minced
- 32 oz. chicken stock
- 1/2 bunch kale (several handfuls), de-stemmed and torn into bite sized pieces
- 1 c. heavy cream
- 2 T. flour
- salt and pepper, to taste
- pinch of red pepper flakes, optional
Steps
- Line a slow cooker with a slow cooker liner for easy clean up.
- Heat a large saute pan over medium-high heat; brown sausage; add minced garlic; stir to combine.
- Drain off and discard excess grease; add sausage and garlic to the lined slow cooker. Add bag of diced potatoes and onions; cover with chicken stock and water, if necessary to completely cover potatoes and sausage.
