Ingredients
- 4 center cut salmon filets, about 1/3 lb. each
- olive oil
- salt and freshly ground black pepper
- 1 large shallot
- 1/4 c. white wine
- freshly squeezed juice of 1 lemon
- 1 c. heavy cream
- 1/4 c. freshly chopped dill
- 3 T. capers
- Garnish: thin lemon slices and more freshly chopped dill
Steps
- Preheat oven to 400 degrees.
- Lightly coat a large skillet with olive oil; heat on medium-high heat until hot, but not smoking.
- Season salmon on all sides with salt and pepper; sear on both sides; remove salmon to a baking sheet; bake 12-15 minutes, or until just done through.
