Ingredients

  • 4 center cut salmon filets, about 1/3 lb. each
  • olive oil
  • salt and freshly ground black pepper
  • 1 large shallot
  • 1/4 c. white wine
  • freshly squeezed juice of 1 lemon
  • 1 c. heavy cream
  • 1/4 c. freshly chopped dill
  • 3 T. capers
  • Garnish: thin lemon slices and more freshly chopped dill

Steps

  1. Preheat oven to 400 degrees.
  2. Lightly coat a large skillet with olive oil; heat on medium-high heat until hot, but not smoking.
  3. Season salmon on all sides with salt and pepper; sear on both sides; remove salmon to a baking sheet; bake 12-15 minutes, or until just done through.
